ABOUT THIS WINE
Assyrtiko by Gaia Wild Ferment 2021 is a dry white wine from the PDO Santorini appellation in Greece, made exclusively from 100% Assyrtiko grapes. Gaia Wines, founded by pioneers of the modern Greek wine movement, crafts this wine from old, ungrafted vines in the Pyrgos vineyard, situated on Santorini's volcanic soil. The wine's unique character is shaped by its wild fermentation process, utilizing native yeasts present in the vineyard and winery, contributing to a complex flavor profile. This expression aims to capture the essence of Santorini's volcanic landscape.

WINE MAKING PROCESS
The 2021 Assyrtiko by Gaia Wild Ferment begins with a 12-hour skin contact period at approximately 10°C. Fermentation is initiated using wild yeasts, occurring in a combination of stainless steel tanks (50%), new French oak barrels (20%), American oak barrels (10%), and acacia barrels (20%). Post-fermentation, the wine is aged for five months, with 50% in stainless steel and the remainder in a mix of acacia, French, and American barriques. The grapes are sourced from old vines, some ungrafted, in the Pyrgos vineyard, and are hand-picked.
