ABOUT THIS WINE
Papagiannakos Assyrtiko 2022 is a dry white wine from the PGI Attica region of Greece, produced by Domaine Papagiannakos. The estate, founded in 1919 and now managed by the third generation, is committed to highlighting the unique Attican terroir and indigenous grape varieties. The vineyard's north-facing aspect and unirrigated limestone soil at approximately 100 meters altitude contribute to the wine's distinctive characteristics, with vines ripening slowly to develop complexity while retaining acidity.

WINE MAKING PROCESS
The Papagiannakos Assyrtiko 2022 is produced from 100% Assyrtiko grapes. The grapes are typically harvested in late August. Vinification involves fermentation in stainless steel tanks at controlled temperatures of 16-18°C, with some skin contact employed. The wine is unoaked. Following fermentation, it undergoes maturation in stainless steel before being aged in the bottle for up to a year. Lees stirring (battonage) is utilized to enhance texture and complexity.
