WINE MAKING PROCESS
Asti Martini is produced using the Martinotti-Charmat method, a technique involving secondary fermentation in pressurized stainless steel tanks (autoclaves). This process is designed to retain the natural sweetness and vibrant aromas of the Moscato Bianco grapes. Fermentation is arrested early to achieve the desired residual sugar level. The grapes are handpicked, typically in early September, from the Asti region. Martini & Rossi incorporates sustainability practices in its grape sourcing and winemaking.
