WINE MAKING PROCESS
The Astobiza Txakolina is produced by Okendo Txakolina using grapes from their estate vineyard. The process begins with hand-harvesting in small boxes, followed by a meticulous second selection of grapes on a sorting table. The grapes undergo destemming and cold maceration before being gently pressed. The must is then statically racked, and fermentation takes place at controlled temperatures. Following fermentation, the wine is aged young over lees. The wine undergoes an inert, stabilized, and microfiltered process before bottling.
