WINE MAKING PROCESS
Atanasius is produced using indigenous yeasts for fermentation, which typically occurs in used oak barrels or oak vats. The grapes undergo maceration on the skins for several weeks, around 3-4 weeks. Following fermentation, the wine is aged for approximately 11-12 months in used oak barrels of varying sizes (500-1500 liters). Harvest is performed by hand. The estate adheres to biodynamic farming practices, holding Demeter certification, and employs minimal intervention throughout the winemaking process. Total sulfur levels are reported to be low, with some vintages having no added sulfur.
