WINE MAKING PROCESS
The winemaking process is entirely natural and non-interventionist. Spontaneous fermentation is carried out using only indigenous yeasts. Semi-carbonic maceration takes place in stainless steel tanks under carbon dioxide gas for 25 to 30 days to preserve delicate aromatics. The grapes are then gently pressed using a traditional 7-hectoliter hand-cranked basket press. The wine is bottled unfined, unfiltered, and with absolutely no added sulfur.
