WINE MAKING PROCESS
Aucalà 2022 is produced using Garnatxa Negre and Carinyena grapes. The alcoholic fermentation and maceration with skins last between 14 and 16 days in 8,000-liter stainless steel tanks, with 'pigeages' performed for extraction. Following fermentation, the wine is aged for 5 months. Twenty percent of the wine is matured in 400-liter oak casks (third and fourth use), while the remaining eighty percent is aged in stainless steel tanks on fine lees. The harvest for the 2022 vintage occurred between October 2nd and 4th.
