WINE MAKING PROCESS
The Ava Marie 2020 Chardonnay is produced through whole bunch pressing, followed by spontaneous fermentation in barrels. The wine then undergoes an extended aging period of 10 to 12 months on its fine lees (sur lie). Following barrel aging, it is transferred to stainless steel for 3 to 4 months to achieve better integration of its components before bottling. The producer aims for a style that reflects the vineyard's specific characteristics.
