ABOUT THIS WINE
Avanti Popolo is crafted by Axel Prüfer, a celebrated pioneer of the natural wine movement who established Le Temps des Cerises in 2003. Located in the rugged, mountainous terrain of the Languedoc behind Béziers, the estate is managed with a deep respect for nature, avoiding all synthetic chemicals. The name of the winery, which translates to 'The Time of Cherries,' is a nod to a historic French revolutionary song, reflecting Axel's non-conformist and anarchist winemaking philosophy. His vineyards are highly biodiverse, surrounded by wild forests and garrigue, which naturally shapes the unique character of his wines.

WINE MAKING PROCESS
This wine is produced using low-intervention, natural winemaking techniques. The grapes, primarily Carignan, undergo whole-bunch carbonic maceration to extract bright fruit flavors while keeping tannins exceptionally soft and approachable. Fermentation occurs spontaneously with native yeasts in outdoor tanks, allowing the natural environment to influence the process. The wine is bottled unfined and unfiltered, with absolutely no added sulfur dioxide (sans soufre), preserving its raw, vibrant energy.
