WINE MAKING PROCESS
Merci is produced from 100% Poulsard grapes, hand-harvested from old vines in Poligny, Jura. The grapes are fully destemmed and undergo spontaneous fermentation with indigenous yeasts in fiberglass tanks for about three weeks. The winemaking philosophy is strictly zero-intervention, meaning no additives or sulfur are used. The wine is then aged for approximately one year in old barrels or fiberglass tanks. It is bottled unfined and unfiltered, preserving its natural character. The vineyards are managed using certified organic and biodynamic practices.
