WINE MAKING PROCESS
The production of this wine begins with the Appassimento method, where grapes are dried to concentrate their sugars and flavors. Following harvest, which occurs between late September and early October, the grapes are manually sorted. The resulting must is then fermented. Post-fermentation, the wine is aged for 12 months in cement tanks. This aging process allows for the wine's components to meld and mature before bottling.
