WINE MAKING PROCESS
The winemaking process for Baglio di Grìsi Nero d'Avola begins with destemming and cooling the fully mature grapes. Alcoholic fermentation occurs in tanks over 8-12 days at 24-28°C with selected yeasts, employing frequent pumping over to enhance color and aroma extraction. Following fermentation, the wine is aged in wood. The estate, Feudo Disisa, has been owned by the Di Lorenzo family for over a century and was established as a winery in 2004.
