WINE MAKING PROCESS
The Dominio de Tares Baltos 2021 is produced using 100% Mencía grapes. The harvest takes place in the second half of September, with grapes hand-picked bunch by bunch into 15kg boxes. Fermentation is carried out at a controlled temperature of 29°C for 10 days, using native yeasts. Following fermentation, the wine undergoes aging for 4-7 months in French and American oak barrels, some of which are previously used. An additional period of 9-15 months of bottle aging follows before release.
