WINE MAKING PROCESS
The Banyuls Cuvée Méditerranée is a fortified wine produced using the Vin Doux Naturel method, where fermentation is stopped by the addition of grape spirit. The primary grape variety is Grenache. Following fermentation, the wine is aged for four years in barrels, with 80% of these barrels having previously held red wine. During this aging period, the 'ouillé' technique is employed, meaning the barrels are regularly topped up to prevent excessive oxidation. This process aims to develop complexity while retaining a degree of fruit freshness, positioning it stylistically between Rimage and Traditional Banyuls.
