WINE MAKING PROCESS
The Barbabolla 2023 is crafted with meticulous attention to natural processes. Grapes are hand-picked from vineyards cultivated using organic and biodynamic farming practices, often from small, abandoned plots cared for by the "Barbaboyz." Vinification involves fermentation with native yeasts, ensuring the wine's authentic expression. Following the ancestral method, the second fermentation occurs in the bottle, initiated by must from dried grapes. This approach results in an unfiltered wine with no added sulfites, preserving its natural character. The wine is not disgorged, meaning it retains its natural sediment, which contributes to its texture and complexity.
