ABOUT THIS WINE
The Barbadillo Obispo Gascon Palo Cortado 15 Years is a distinguished dry fortified wine from Andalucia, Spain. Produced by Bodegas Barbadillo, a family-owned winery with over 200 years of history, this Palo Cortado is made from Palomino Fino grapes. Palo Cortado is a rare sherry style, historically marked by a cellar master's sign on barrels where the protective flor yeast layer dies off, leading to oxidative aging. The wine is aged oxidatively for a minimum of 15 years using the traditional Criaderas and Solera system. Barbadillo's long-standing tradition in sherry production and their management of vineyards in Jerez contribute to the unique character of this wine.

WINE MAKING PROCESS
The Barbadillo Obispo Gascon Palo Cortado 15 Years is produced from Palomino Fino grapes grown on Albariza soil in Andalucia. After fermentation in stainless steel tanks, the wine undergoes a lengthy oxidative aging process for a minimum of 15 years in American Oak casks using the traditional Criaderas and Solera system. This method involves blending wines of different ages, with the final wine bottled from the fifth criadera of an eight-tier solera. The solera system ensures consistency and complexity by integrating older wines with younger components over time.
