WINE MAKING PROCESS
The Barbaresco Rabajà 2020 is produced using 100% Nebbiolo grapes. Fermentation occurs in stainless steel or large wood tanks with indigenous yeasts, followed by an extended maceration period of approximately 40 days. Post-fermentation, the wine is aged for 18 months to 2 years in large Slavonian oak casks (botti). The grapes are hand-harvested, and the winery practices organic farming. Minimal sulfur dioxide is used throughout the process.
