WINE MAKING PROCESS
The winemaking process for Barbera d'Alba Terre del Barolo begins with destemming and soft pressing of the 100% Barbera grapes. Alcoholic fermentation occurs with selected yeasts at controlled temperatures of 24-26°C, featuring frequent pump-overs for extraction. Micro-oxygenation is utilized to enhance varietal aromas. Malolactic fermentation is completed by the end of winter. The wine then undergoes aging for 3-4 months in stainless steel tanks before bottling. The harvest is performed manually between October 1st and October 15th, with a maximum yield per hectare of 10 metric tons.
