WINE MAKING PROCESS
The Enzo Boglietti Barbera Romani is produced using 100% Barbera grapes. Following manual harvesting, the grapes undergo fermentation for three weeks at a controlled temperature, with daily pumping over and punching down, utilizing wild yeasts. The wine is then aged for 22 months in barriques, 40% of which are new, followed by six months of bottle aging before release. The winery adheres to organic farming principles.
