WINE MAKING PROCESS
The winemaking process for Barolo Bricco Ambrogio begins with fermentation in stainless steel tanks using indigenous yeasts, accompanied by a 10-12 day submerged-cap maceration. Malolactic fermentation occurs in 225-liter barrels over winter. The wine is then aged for approximately 11 months in neutral French oak barrels, followed by 13 months in large casks ('botti grandi'). A further 8 months are spent in stainless steel, and the wine is finished with 6 months of bottle aging before release. Harvest is typically performed by hand after October 10th.
