WINE MAKING PROCESS
The winemaking process for Parusso Barolo Bussia begins with hand-harvested Nebbiolo grapes, selected meticulously in the vineyard and cellar. Spontaneous fermentation with indigenous yeasts takes place, often without added sulfites, followed by a maceration period of around 10 days at a maximum temperature of 30°C. The wine is aged for 12 months in 50% new French oak barrels and 50% one-year barriques. It is then blended and aged for an additional 18 months in 16 hl French oak barrels. Following this, it refines in large 5000-liter Slavonian oak barrels for 18 months, and then undergoes further aging in the bottle.
