WINE MAKING PROCESS
The winemaking process for this Barolo begins with destemming and a prolonged fermentation with maceration on the skins, lasting 10-35 days in stainless steel vats at controlled temperatures. Malolactic fermentation follows, often in large barrels. A crucial element is the extended aging period, with a minimum of 18 months in large Slavonian oak or French oak barrels, followed by further refinement in the bottle. This process aims to develop the wine's structure and complexity.
