WINE MAKING PROCESS
The winemaking process for Giacomo Borgogno & Figli Barolo Cannubi 2015 begins with spontaneous fermentation in concrete and cement tanks, followed by a prolonged submerged cap maceration of 40-50 days. Post-fermentation, the wine is aged for four years in large Slavonian oak casks (4500L). A further six months of refinement in bottle precedes release. The estate is also in conversion to organic wine production.
