WINE MAKING PROCESS
The Paolo Scavino Barolo Carobric 2018 is produced from 100% Nebbiolo grapes. Each vineyard parcel is vinified separately in stainless steel tanks, with submerged-cap maceration lasting 10-12 days. Alcoholic fermentation, utilizing indigenous yeasts, takes place over 20-30 days at controlled temperatures. Following malolactic fermentation in barrels, the wine undergoes aging for 12 months in French oak barriques and another 12 months in larger French oak barrels (botti). The wine is then blended in stainless steel tanks before bottling 6-7 months prior to release.
