WINE MAKING PROCESS
The Elvio Cogno Barolo Cascina Nuova 2019 is produced from 100% Nebbiolo grapes. Following harvest, the wine undergoes a maceration period to extract color and tannins. It is then aged for approximately 30 months in a combination of barrique and tonneau, with the winery also utilizing traditional large Slavonian oak barrels (botti) for other bottlings. Barolo DOCG regulations mandate a minimum aging period of 38 months, with at least 18 months in oak. Elvio Cogno practices organic vineyard management.
