WINE MAKING PROCESS
The winemaking process for this Barolo begins with a manual harvest of Nebbiolo grapes into 20 kg boxes. Fermentation occurs in stainless steel tanks at controlled temperatures (25-28°C) for about 25 days, with multiple pressings employed for optimal phenolic extraction. Following fermentation, malolactic fermentation takes place at 18-20°C. The wine is then aged for 24 months in French oak tonneaux. No filtration or chemical stabilization is performed before bottling, and a minimum of 12 months of bottle aging is recommended.
