WINE MAKING PROCESS
The winemaking process for Fontanafredda Barolo begins with hand-harvested and selected Nebbiolo grapes. Fermentation takes place in stainless steel vats with controlled temperatures, followed by a maceration period ranging from 12 to 30 days. Malolactic fermentation is also a key step. The wine then undergoes a significant aging period, adhering to Barolo DOCG regulations which require a minimum of 38 months of total aging, with at least 18 months in oak. Fontanafredda typically utilizes large Slavonian and French oak casks for at least two years, followed by a minimum of 12 months of bottle aging before release.
