WINE MAKING PROCESS
The winemaking process for Principiano Giuseppe Barolo begins with a manual harvest in early October. Fermentation occurs in steel tanks with an emerged cap system for 14 to 16 days, followed by malolactic fermentation after racking. The wine is then aged for three years: two years in large Slavonian oak barrels (25 hectoliters), followed by 12 months in stainless steel tanks, and concluding with bottle aging. This approach emphasizes traditional methods and a connection to the land.
