WINE MAKING PROCESS
The winemaking process for Barolo Fossati Dosio begins with fermentation in thermo-conditioned steel tanks for 18-20 days at 25-26°C, with daily pumping over. This is followed by malolactic fermentation. The wine then ages for a minimum of 18 months, utilizing oak woods of different capacities and barriques. The 2013 harvest took place in early October, benefiting from ideal late-season weather for Nebbiolo ripeness. The estate employs organic farming practices, including the use of cover crops and the avoidance of herbicides.
