WINE MAKING PROCESS
The Barolo Fossati 2017 begins with spontaneous fermentation using indigenous yeasts in concrete tanks for approximately 12 days, followed by a 40-day submerged cap maceration. Malolactic fermentation takes about 15 days. The wine then undergoes an extended aging period of four years in large Slavonian oak casks (4500L), a traditional practice for this producer. Finally, it is refined for an additional six months in the bottle before release.
