WINE MAKING PROCESS
The winemaking process for Barolo La Serra begins with a manual harvest in mid-October. Fermentation takes place in stainless steel and concrete tanks at controlled temperatures, utilizing selected or indigenous yeasts. Maceration involves submerged cap techniques for 5-10 days, with potential for extended post-fermentation contact. Malolactic fermentation is completed. The wine is then aged for 18 to 36 months in a mix of oak barrels, including Slavonian oak and French oak barriques of various sizes and ages, with some new oak usage. Viticulture practices include organic fertilization and a focus on natural farming methods.
