WINE MAKING PROCESS
The winemaking process for Cascina Massara Barolo Monvigliero 2017 involves hand-harvesting the Nebbiolo grapes. Fermentation takes place in stainless steel tanks with controlled temperatures, utilizing approximately 60% whole grapes and a cold pre-fermentation maceration for 20-3 weeks. Following alcoholic fermentation, malolactic fermentation occurs in wood barrels. The wine is then aged for 36 months in large oak barrels, followed by bottle rest. This traditional approach aims to highlight the purity of the grape and the expression of the Monvigliero cru.
