WINE MAKING PROCESS
The winemaking process for Barolo Monvigliero begins with hand-harvested Nebbiolo grapes. Fermentation occurs in stainless steel rotary fermenters for 20-30 days using indigenous yeasts, followed by submerged-cap maceration for 10-12 days. The wine then ages for 20 months in large French oak casks, followed by 3 months in stainless steel. Malolactic fermentation takes place in 225-liter barrels over winter. The wine undergoes a further 14-16 months of bottle aging before release. Approximately 400 cases are produced annually, with a portion of production sometimes sold in bulk to maintain quality standards.
