WINE MAKING PROCESS
The winemaking process for Barolo Perno Riserva Vigna Disa begins with hand-harvested Nebbiolo grapes in mid-October. Fermentation occurs spontaneously in stainless steel tanks at controlled temperatures of around 30°C, with a long maceration period of 4 to 7 weeks. Following fermentation, the wine undergoes natural malolactic fermentation. Aging takes place for 24 months in large Slavonian oak barrels (50 hl), with a focus on older barrels and minimal new oak influence. Post-barrel aging includes 4-6 months in stainless steel tanks and a minimum of 6 months of bottle rest before release.
