WINE MAKING PROCESS
Revello Fratelli employs sustainable viticulture, including organic practices and minimal treatments, with two green harvests to enhance grape concentration. Grapes are hand-harvested in October. Fermentation takes place in stainless steel tanks or roto-fermenters with native yeasts, featuring a 6-8 day maceration on skins followed by 10-15 days of fermentation. The wine is then aged for 24 months in French barriques (20% new) and rests for at least 6 months in bottle before sale. The winery intentionally avoids fining or filtering.
