WINE MAKING PROCESS
The winemaking process for the Barolo Riserva Paolo Scavino begins with separate vinification for grapes from each vineyard. Maceration occurs with a submerged cap for 10-12 days in stainless steel rotary fermenters, followed by indigenous yeast fermentation in stainless steel for 20-30 days. Malolactic fermentation takes place in oak barrels. The wine is then aged for 20 months in large French oak casks (botti), with an additional period in stainless steel before bottle aging. Harvest is conducted by hand in early October.
