WINE MAKING PROCESS
The winemaking process for Barolo Riserva Rocche dell'Annunziata begins with hand-harvesting after October 10th. Maceration occurs with submerged caps for 10-12 days, followed by fermentation in stainless steel for 20-30 days using indigenous yeasts and temperature control. Malolactic fermentation takes place in 225L barrels over winter. The wine is then aged for 10 months in neutral French oak, followed by 24 months in large casks, 10 months in stainless steel, and finally 22 months in bottle before release. This extensive aging regimen is a hallmark of Barolo Riserva production.
