WINE MAKING PROCESS
The winemaking process for Barolo Rocche di Castiglione begins with a late harvest to ensure optimal tannin ripeness. Fermentation takes place in traditional wood vessels using indigenous yeasts, with a submerged cap maceration lasting 60-70 days. Following fermentation, the wine undergoes aging in large, neutral oak casks (botti). The wood for these casks is seasoned outdoors for eight years to mitigate bitter tannins. The estate practices viticulture based on organic principles, avoiding fertilization and irrigation to encourage deep root systems and promote biodiversity.
