WINE MAKING PROCESS
The Stefano Corino Barolo Roncaglie is vinified following traditional methods with contemporary refinements. Fermentation occurs in temperature-controlled stainless steel vats for up to ten days, followed by malolactic fermentation in oak barrels. The wine is then aged for 24 months in a mix of new and used barrique and tonneau oak barrels, with an additional minimum of six months in bottle. The winery employs a philosophy of meticulous vineyard care, using natural treatments and allowing natural ground cover. The wine is not fined or filtered.
