WINE MAKING PROCESS
The Arnaldo Rivera Barolo Undicicomuni 2019 is produced from 100% Nebbiolo grapes. The winemaking process involves fermentation and maceration for about three weeks in stainless steel at controlled temperatures, followed by spontaneous malolactic fermentation in wood. The wine is then aged for 26 months, with 75% in large French oak barrels and 25% in second and third passage tonneaux. Finally, it spends six months in concrete tanks before bottling. An average annual production of 50,000 bottles is noted.
