WINE MAKING PROCESS
The Marqués de Riscal Barón de Chirel Reserva 2015 is produced using grapes from very old vines, aged between 80 and 110 years. Fermentation takes place at a controlled temperature of 26ºC in small French oak vats, followed by malolactic fermentation in fine-grained French oak barrels. The wine is then matured in French oak, with toasted and spiced notes from the oak being prominent. It undergoes a minimum of two years of aging before market release, with additional time spent aging in bottle. This wine was conceived as an experimental project to revive the grandeur of mythical Bordeaux 'Médoc Reservas' and is considered a pioneer of 'high expression wines' in Rioja. It is only produced in the best vintages when the vines fully express the terroir.
