WINE MAKING PROCESS
The winemaking process for the Barton & Guestier Côtes de Provence "Tourmaline" Rosé is carefully managed to preserve its delicate color and aromatic freshness. Grapes are destemmed upon arrival at the winery. A brief maceration period of just a few hours is employed to extract the desired pale pink color while avoiding excessive phenolic extraction. Following this, the grapes are pressed, and the juice undergoes alcoholic fermentation. This fermentation is conducted at precisely controlled cool temperatures, typically between 16°C and 18°C (60-65°F), to ensure the retention of the wine's vibrant fruit aromas and crisp character. After fermentation, the wine is aged on its fine lees for a period of two months before bottling, a technique that contributes to its smooth texture and enhances its aromatic complexity without introducing oxidative notes.
