ABOUT THIS WINE
Baywood Cellars was originally established in 1997 by brothers John and James Cotta, third-generation farmers of Portuguese heritage. Initially starting under the 'Las Viñas' brand in 1986, they transitioned to Baywood Cellars and built a loyal following through their tasting room on Cannery Row in Monterey, California. Today, the brand is part of the Thomas Allen Vineyards & Winery portfolio. Modern releases, including this 2020 vintage, source high-quality fruit from the Lodi AVA, delivering an approachable, fruit-forward, and highly popular expression of Cabernet Sauvignon.

WINE MAKING PROCESS
The winemaking process focuses on preserving the vibrant, fruit-forward character of the Cabernet Sauvignon grapes. Fermentation is conducted in temperature-controlled stainless steel tanks to maintain clean, expressive fruit profiles. Following fermentation, the wine undergoes aging in a combination of French and American oak barrels. This oak program, typically lasting around 14 months, integrates soft, velvety tannins and contributes sweet baking spice and vanilla notes to the final blend, resulting in an approachable, well-rounded structure.
