WINE MAKING PROCESS
Hand-harvested in whole clusters from free-standing vines in southern Beaujolais, the Gamay grapes undergo traditional semi-carbonic maceration for four to eight days. This anaerobic intracellular fermentation takes place inside intact berries before gentle pressing and malolactic fermentation in temperature-controlled stainless steel vats. The wine remains completely unoaked and is bottled within fewer than six weeks of harvest to preserve maximum fresh fruit purity.
