WINE MAKING PROCESS
The winemaking process for this Beerenauslese begins with hand-harvested grapes. After harvest, the grapes are mashed to extract juice, which leaches sugar from the shriveled berries. A gentle pressing follows, initiating a slow fermentation. This fermentation is carefully controlled, with only a portion of the sugar converted to alcohol before being stopped by cooling. This technique preserves the natural residual sugar in the wine. The estate has been committed to organic and biodynamic farming practices since 2005.
