BelColle Alta Langa Cuvée Valentina Extra Brut is produced using the traditional method (Metodo Classico), involving a second fermentation in the bottle to create its effervescence. The grapes, Chardonnay and Pinot Nero, are hand-harvested and placed in ventilated crates. The wine undergoes a minimum of 30 months of aging on its lees, a crucial step for developing complexity and texture. The vineyards are situated on chalky clay hillsides at elevations above 250 meters, adhering to the strict requirements of the Alta Langa DOCG appellation.
