WINE MAKING PROCESS
The Bell'Assai Frappato di Vittoria undergoes fermentation in stainless steel tanks with maceration on the skins for 8-9 days at temperatures between 24-25°C. It then undergoes malolactic fermentation. The wine is aged in tank for 4 months, followed by at least 6 months of bottle aging before release. Harvest typically takes place in the second half of September. The vineyard is located in Acate, southeastern Sicily, at an altitude of 120-150 meters, on gently sloping sandy soils with a calcareous tuff and clay substratum. Vines are trained to vertical shoot positioning with cordon pruning, with a planting density of 4,000-4,500 plants per hectare and yields of 70-80 quintals per hectare.
