WINE MAKING PROCESS
The winemaking process for Belleruche Blanc begins with total destemming of the grapes. A light skin maceration is employed, particularly for Viognier, to extract desirable aromatic compounds. Following gentle pressing and cold static settling, the must undergoes alcoholic fermentation at low temperatures in stainless steel vats. The wine is then aged for about five months on its fine lees, also in stainless steel, before bottling. Harvests are typically conducted at night to maintain grape integrity and aromatic freshness.
