WINE MAKING PROCESS
The production of Ben Ryé Passito di Pantelleria involves the use of 100% Zibibbo grapes. Fermentation occurs in stainless steel at controlled temperatures, with dried grapes added in batches to the fresh must. Following fermentation, the wine is aged for 8 months in stainless steel tanks. It then undergoes a minimum of 12 months of bottle aging before its release. Harvest is a manual process with careful selection of grapes. The vineyard cultivation employs the traditional 'alberello pantesco' system on the volcanic island of Pantelleria.
