WINE MAKING PROCESS
The production of Betaneli Saperavi 2021 begins with destemming the Saperavi grapes. Fermentation takes place in open French barrels, where the cap is manually immersed several times. This technique is employed to achieve gentle tannins and enhance flavor depth. Post-fermentation, the wine undergoes an aging process of approximately 12 months in closed oak containers. Bolero & Company's winemaking approach is rooted in preserving and showcasing Georgia's long-standing viticultural heritage.
